Cheese and Biscuits: Stokey Bears, Stoke Newington

Though far from the first street trader to bring a genuine American cheeseburger to London ( Yianni had most beat by a few years) it was obvious that this was an operation that truly understood exactly what made a great burger, and by golly it showed in their signature Grizzly Bear, loose-mince medium beef bound by plastic cheese, with just a touch of bacon jam and rashers of gloriously crisp streaky bacon.

Mirroring the way the streetfood scene at large grew up and settled down, Red Market transformed into a vast multi-level venue hosting corporate prosecco bars and charging an entrance fee, and Burger Bear found a permanent site on Stoke Newington High Street and rebranded as Stokey Bears.

But this being London 2016 and because we are told man cannot live by burgers alone (actually you can, I can prove it) the menu has expanded to include other US diner staples such as hot dogs, which we didn't try, and chicken wings, which - unfortunately - we did.

If Stokey Bears honestly think hot wings are better served in huge clumsy unjointed portions requiring the diner to tear them apart themselves, then that's their outlook, but to me it just looks like laziness.

Bleecker Burger's version has blue cheese and hot sauce on but here we have French's mustard, some kind of green relish and what I think is The Rib Man's famous Holy Fuck sauce - and as anyone who's ever dipped their fries in Holy Fuck will tell you, this is a very good combination.

Jazz music, dimmed lights, a disco ambiance and candles, you'll know that you've reached Stokey Bears, or the Burger Bear place, a destination burger joint, as they say.

What's unique about this place is not only the burger, its taste and shape but the bacon jam The Burger Bear is famous for.

The burger's meat is supplied by Charlie at Flock & Herd, Peckham's finest butcher.

This jam makes the signature burger, The Grizzly Bear, which has made the place famous.

The burger is good, not extraordinary as it's described.

Confronted by the Hackney Citizen, Tom Reaney, who turns 32 today, said: “We aren’t tattooing people… Obviously we aren’t tattooing people in a restaurant.

Prior to today, Reaney had appeared to suggest people would be getting ink done at his eatery in the early hours to celebrate his birthday.

My birthday, negronis, white russians, burgers, tattoos…” On social media on Saturday tattoo artist Tha Roofer proclaimed: “Less than a week to go until @burgerbeartom’s birthday and @stokeybears #handpoked #flash #tattoo night on Tuesday the 7th Feb.

They added: “If convicted, the person responsible for the management of the premises would be liable to a fine of up to £2,500… We would consider prosecution if a business is operating an illegal tattooing event as unlicensed tattooing can pose a serious risk to people’s health.”

Top burgers, fries, hot dogs and wings, accompanied by beer from the East Dulwich Bear Hug Brewery.

In the case of the Burger Bear, the difference is disco.

Yes, the burgers here are among the best you’ll get in London – some with the fiendishly hot Rib Man Holy Fuck sauce, another with bacon jam – but what gives this previously peripatetic operation its appeal is an extra dollop of fun.

The beer is provided by the East Dulwich Bear Hug Brewery, which gives a portion of turnover to rainforest charities.

As well as the burgers and fries, which come in authentically tacky plastic baskets, of course, there are hot dogs and wings.
