Thinly slice the chicken and coat in the chipotle sauce.

Put a spoonful of the chicken mixture on the tortilla and layer up with roasted peppers, spring onion, cheese and coriander.

Fold the tortilla wrap in half and brush lightly with olive oil.

Heat a pan and griddle both sides on a moderate heat on both sides until the cheese is melted and the filling is oozy.

Wahaca Brixton set to open up in Atlantic Road in early October

Another food chain is set to start trading in Brixton with the Mexican-themed Wahaca restaurant expected to open up in the ground floor of the former Bradys pub in Atlantic Road in mid-October, 2014.

The Wahaca chain was founded by Thomasina “Tommi” Miers, a Cheltenham-born writer and television presenter who won the BBC’s Master Chef competition in 2005.

The new Wahaca branch will occupy the former bar and function room of the much-loved Bradys/Railway Hotel pub which was the subject of a long and passionate campaign by locals to retain it as a community asset.

Founded by MasterChef winner Thomasina Miers, Wahaca aims to provide a more authentic take on Mexican food than the Tex-Mex variety.

We ordered a variety of the street food style sharing plates, mainly appearing in unhelpful numbers of three.

To counter the lack of spice, especially in blander plates like the Black Beans & Cheese Quesadillas, we added plenty of the Wahaca-made sauces as well as ordering a bowlful of lime quarters to liberally squeeze over each mouthful, really helping to bring out the true depth of flavours that you should expect from Mexican food.

The limitations of being a chain can be tasted; in comparison to independent and unique places, Wahaca lacks a charmingly ramshackle nature or a malleable menu, although it is more seasonal than stagnant and the atmosphere was pleasantly busy yet spacious, often a rarity within Brixton.

While more authentic Mexican food is five minutes away, Wahacca does offer some really tasty food at a fairly reasonable price, (it’s possible to leave fully stuffed for well under £30 per person with service), and if they do engage with the community with worthwhile and genuinely inclusive events then Wahaca may be a decent, if modern, compromise for the clock-towered Victorian building.

Speaking about Mexican ones, we can add a special atmosphere, sparkling from joy.

All locations (by now 10) of this restaurant chain are suitable for every occasion; bring your kids and make good memories, spend some time with family, hang out with a noisy gang of pals.

You will enjoy the food here — demolish some real Mexican street food and save a room for desserts!

FMG was commissioned by architectural practice Softroom to design and make bespoke curtains for a new Wahaca restaurant in Brixton, London.

The restaurant resides in the original Railway hotel and mixes original restored fetaures with bold new interior design.

We were asked to create large scale velvet patchwork curtains which would greet customers as they step through the door.

The finished design sees an abstract face fractured and built up of intersecting geometric shapes and lines and takes inspiration from street art and Mexican wrestling masks.

The reverse of the curtains feature the same design in outlined in green, blue and yellow embroidery on grey velvet.
