Remettez sur le feu et desséchez la pâte jusqu’à ce qu’elle se détache de la casserole.

Retirez du feu et laissez tiédir.

Ajoutez alors un œuf, mélangez vigoureusement jusqu’à ce que la pâte soit lisse.

Disposez de petites cuillères de pâte sur une plaque à pâtisserie anti-adhésive.

Faites cuire pendant 25 à 30 min sans ouvrir le four, jusqu’à ce que les gougères soient bien gonflées et dorées.

So one of my favourite places to go when I feel like some fancy cheese is Androuet in Old Spitalfields Market.

There are three huge chillers in the shop: one full of hard, mature cheese, one with blue or soft cows milk cheeses, and one dedicated to goats cheese and all types of squishy Brie-types.

Now, all of you cheese-fact-fans out there will know that the black line is not actually the same kind of mold found in blue cheeses, but a layer of ash.

Either way it’s this that adds a real hit of flavour in the middle of the cheese, and also a bit of an acrid aftertaste.

It is probably one of the strongest blue cheeses I’ve had with a really intense flavour.

Popularised by the Swiss and mastered jointly with the French, cheese fondue was created with the sole purpose of increasing cheese consumption throughout 1930s continental Europe.

There are two devilishly thick and generous fondues to choose from: the classic gourmet ‘fondue of the day’ or a very creamy blue cheese option which can be ordered at the charcuterie with baby potatoes.

After you've recovered from your cheese sweats, head to Androuet's cheese shop for a formidable selection of  French and British cheeses, innumerable tangy chutneys and fine artisan meats.

The melted cheese is served with campaillou bread, pickles, cured meats and roasted garlic, while the chocolate fondue comes with marshmallows, honeycomb and fruit.

Special Cheese Bar fondue nights with changing menus take place every Thursday from 6pm, but be quick fromage fiends: you’ve only got until February 2018 before their fondue disappears forever.
