Since exploding onto The Cut in early 2012 Byron has regularly filled our bellies with what it proudly boasts are “proper burgers”.

Our favourites are the Classic, and when we are feeling fat, the Skinny, which comes burger bap free but with a succulent salad.

But it’s perhaps the décor which is the most striking thing about the burger bar.

Split into sections, it almost looks like three different burger restaurants in one, with separate shop signs above each one.

Our little known fact about Byron: Burger fanatic and Byron owner Tom Byng was inspired to start the chain because of the quality of burgers he had in Providence, Rhode Island.

Stott began working with Byron MD Tom Byng soon after making an amicable split from NB (as in Nota Bene) Studio, the company he founded with Nick Finney and Alan Dye more than a decade earlier after stints with Pentagram and Landor.

At the first meeting he found Byng ‘intimidating … but in a good way’, and admired the latter’s obsessive interest in the details of his restaurants, demonstrated by his pride in the ferocious force of the hand dryers in the loos.

Shortly after that meeting, Stott had devised a few basic principles that guided his subsequent approach.

Third, the chain’s architects, Michaelis Boyd Associates, were interested in developing an individual style for each restaurant, which opened a path for a more radical graphic approach.

Stott: ‘With nothing to say and nothing to show, my approach was to treat each restaurant as if it was the only one.’

Lucky Chip have been doing the rounds for ages with pop ups here, there and everywhere and now they’ve finally set up shop in a pretty restaurant on Ridley Road market in Dalston.

Without wishing to offend any locals, the road itself is a bit minging; it’s not one I’d wish to … Continue reading Lucky Chip Burgers and Wine, Dalston

Byron Waterloo serves proper hamburgers, the way they should be.

Properly sourced British beef, ground fresh into 6oz patties and cooked medium so it's pink and juicy and served in a squishy bun with a pickle on the side.

Fries, sides, extra-thick milkshakes and craft beers round things off.

A Mini Byron menu for kids plus vegetarian options ensure there's something for everyone.
