Their detox packages are at the heart of their business: when the founder Lily Simpson launched her business in January 2012, she prepared and delivered all the meals herself.Lured in my by addiction to their Kingly Street outpost (a stone's throw from the Bazaar offices and purveyors of the best butternut squash and quinoa salad in town), I signed up for a five-day detox.

My breakfast of granola with flaked coconut, pecans and rice milk is absolutely delicious, but I'm still starving, even after drinking the little bottle of juice (cucumber, spinach, green pepper and lime), so I take the daily probiotic capsule that's also provided, washing it down with the wheatgrass shot.

Herbal teas are allowed – they even supply you with a daily sachet of mint tea – but I succumbed to the irresistible lure of Yorkshire Tea (with milk, obviously) on more than one occasion.Even taking these occasional slip-ups into account, a week on the Detox Kitchen plan definitely made me look and feel better.

The idea for the Detox Kitchen came when a friend, who had tried another diet delivery company but didn’t like the food, said she wished Simpson could cook healthy meals for her to help her lose weight.

On Simpson’s detox plan, breakfast could be 70g of muesli with rice milk, followed by a smoothie and six cashew nuts for a snack, a hearty lentil salad for lunch, with another snack, such as a pot of edamame beans and chilli, in the afternoon.

To launch the Detox Kitchen Simpson secured a £10,000 bank loan, hired a web designer and by the end of January 2012 had her first clients.

She bought, cooked, boxed up and drove the food across London herself between three and seven in the morning, before processing orders and going back to an industrial kitchen she rents in Battersea, south London, to cook for the next day.

Simpson recently opened a concession in Harvey Nichols’ Food Hall in London, where her salads – all based on her detox recipes – are piled high in bowls: bright turmeric-stained cauliflower, beetroot and quinoa, and butternut squash with hazelnuts.

Lily Simpson, the chef and co-founder of Detox Kitchen, started her business with the simple and humble idea of making healthy food “really delicious”.

The businesses started as a delivery business, but it now operates two delis in Soho and Fitzrovia and a third is opening in Russell Square this week.

“From the delivery side of the business, we created a premium product,” the 32-year-old says, adding that the idea of the delis “was to get a much bigger audience and compete with the likes of Pret, EAT and Itsu”.

The former caterer admits that London is far from short of “healthy” food outlets these days, but she says that in 2012 she spotted and took advantage of a gap in the market.

Similarly to the delivery business, the delis aim to bridge the gap between healthy and tasty food, offering a range of salads, curries, smoothies and even cakes and coffees – albeit with a much smaller price tag.

Deliciously Ella with her Mae “delis” (although she has now, in a slightly panicky way, distanced herself from the word “clean”); M Raw, “London’s first 100% gluten-free fine dining restaurant”; Vita Mojo, which promises to “put you in control of your diet”; the Detox Kitchen; Rawligion; and too many more.

But my main event is this glittering, plant-filled restaurant from Camilla Fayed, daughter of Mohammed Al, in west London, clean eating’s spiritual home.

In what’s something of a portent, ingredients are repeated all over the place: the frijoles, salsa, guacamole and “sour cream” (grouty stuff made from nuts) that feature in a plate of nachos also turn up in the Mexican bowl; ditto the meze – clunky, pasty sweet potato patties (“falafel”?

A vast, Instagram-worthy sundae, a “Berry Mess” of mostly blueberries, “cream” and “coconut nice cream” with, lurking in its depths, dusty shards of “maple meringue” (made of, I dunno, actual dust?)
