Until that happens I have visited a newly opened restaurant in Shoredich, London named “Via Emilia”, an ancient Roman road which still crosses the region connecting the main cities.

This restaurant specializes in fresh pasta and every single product including beer and wines come from the region of Emilia Romagna.

At Via Emilia you can also try the famous “Gnocco Fritto”: little rectangles of dough made with flour and lard and then fried making it dangerously addictive and ideal to be served with the finest Italian cold cuts and cheeses.

This was followed by a selection of fresh pasta: pisarei (little gnocchi with beans typical of the region), ravioli with ricotta and spinach, butternut squash capellacci and tortellini in brodo with a filling of pork and parmesan.

Take A Tour Of Emilia-Romagna At This New Shoreditch Italian The people behind Food Roots and W1 restaurant In Parma have rolled up in Hoxton Square with their second restaurant, Via Emilia.

That's a big claim when you stack it up against the area's big Italian community, and array of chewy Neapolitan pizza crusts and ragu-studded pastas.

Via Emilia is a small spot, and unassuming: enough low tables and wooden stools to fit 40 covers, warm lighting, quiet music.

The menu's built around the fierce regionality of Italian cooking traditions, each pasta attributed to its birthplace and named in that dialect.

Even gluten-avoiders are gathered tenderly into the Via Emilia embrace, thanks to a gluten-free tagliatelle option available with any of their sauces (though you'll be left pining for the gnoccho fritto, still off limits).

After our first restaurant "In Parma by Food Roots" in Central London, we opened Via Emilia.

Once upon a time an Italian guy proud to be from Emilia-Romagna region, up-north Italy, the region where the home-made egg pasta was originally invented, decided to create a whole restaurant using every single product, pasta recipe, beer and wine that come maniacally and exclusively from his region.

Covering the typical fresh pasta dishes from each Emilian city hand-made in front of you and following the original Grandma’s own recipe and maintaining an outstanding value.

Also Launching the real Gnocco Fritto in London, the typical gently-fried bread to enjoy with meat&cheese.

Offering just 40 covers, Via Emilia is intimate yet light and airy with its traditional white marble and dark stained wood.
