I was impressed with the new digs (loved the massive marble bar) and couldn’t get enough of the food on offer.

For the launch, the dining area was cleared for standing room only.

Servers, bar staff and chefs were on the ball attending to guests with efficiency and personal attention as much as possible.

I’ve been a fan of Brindisa since soon after I first moved to London.

Living these wise words to the fullest are the Brindisa group who, instead of rolling out hundreds of identical tapas restaurants, have carefully and organically opened just four, each equally good and comfortably unique: Tapas Brindisa (in Shoreditch, Borough Market Soho) and Casa Brindisa (in South Kensington).

And now – still following little Bilbao’s advice to “bend with the wind” – they’ve just relaunched their Shoreditch branch with a vamped up interior and a little more of their Borough market spirit.

Taking Brindisa’s alfresco dining options up a notch or two in everyone’s estimations, this one also has an outside heated courtyard, as an alternative to the new Barcelona-style bar facing the open kitchen, and long communal tables.

It’s been more than 30 years since Monika Linton launched Brindisa, and it became London’s go-to for top Spanish ingredients.

It pioneered the likes of chorizo, Iberico ham and smoked paprika, and for a time supplied virtually every Spanish restaurant in town.

These days, Brindisa’s own restaurants are still among the very best of those, serving up tapas with Spanish flair and a large plateful of conviviality.

Also among the highlights are arroz negro, black rice (dyed with squid ink) with squid and a punchy alioli, smoky lamb cutlets cooked on the grill, and a whole octopus leg with potatoes and paprika.

Be prepared that there may be a queue at busy times, but know that it’s worth the wait, and while it’s not the cheapest tapas in town the ingredients that go into are absolutely unbeatable.

Spanish restaurant group, Brindisa Kitchens, recently relaunched their Tramontana restaurant with a new-look and new name, Tapas Brindisa Shoreditch, at 152 Curtain Road.

Defined by founder and owner Monika Linton’s early years on Spain’s Eastern coast; the restaurant specialises in Mediterranean, Eastern and Southern Spanish cuisine; from Cádiz to Catalonia.

Tapas Brindisa Shoreditch serves lunch throughout the week from 12pm – 4pm, which is available to eat in or take away.

Offering a rotating lunch menu that includes hot and cold bocadillos (sandwiches), marking the arrival of the famous Brindisa chorizo roll, a Borough Market favourite, to East London.

The original Brindisa, on the outskirts of Borough Market, might remain a bustling (aka chaotically over-popular) beacon for small-plate scoffing, but the tapas micro-chain’s refurbed Shoreditch outpost is a nicer place to be.

Brindisa, once groundbreaking, isn’t really competing with Spanish titans like Barrafina and José these days.

Ham and cheese croquettes – a litmus test for any self-respecting tapas joint – were perfect little béchamel bombs.

Chorizo de Léon was essentially an open version of the Brindisa market stall’s chorizo sandwich, a simple layering of good ingredients – just oily, piquant sausage, piquillo peppers, rocket and chewy bread.

Less successful were the winking riffs on increasingly tired food trends: a slider-size burger of sausage, morcilla and mushroom mayonnaise was a one-note whack of salt and little else.
