I was there for four years, then came back to London where I worked at Petrus when Tristan Welch was head chef, then went back to Spain, then back to London when Tristan opened Launceston Place.

Vegan food for so long has been a bit bland and boring - like risottos and lasagnes.

There are more and more places offering vegan food now and I predict that in five years time the vegan industry is going to be massive.

It’s a totally different game running a vegan kitchen, but there was only so long I could stay in restaurants that served meat.

The thing with this vegan industry is there are no chefs who cook vegan food and own restaurants.

But a new Shoreditch haunt, Cook Daily, bucks the trend – all the food served is 100% vegan.

Boxpark, the shipping container-based Panopticon of brands that juts out at you as soon as you exit Shoreditch High Street station, is the home of Cook Daily (or #cookdaily, to use the Boxpark argot.)

The Hard Bowl comes with sprigs of thyme sitting on the top, and this rounds out the scotch bonnet sauce really well – practice caution with the actual scotch bonnet chilli itself though, even “occasionally putting my fork in it” was enough heat for my comrade.

The trick with this dish is the inclusion of steamed plantain, yams, and wholemeal dumplings – home-cooked Jamaican ‘hard food’ in this street-food style is a brilliant idea, vegan or not – comforting, but with that kick.

If, like us, you’re more than happy to trade 45 minutes of conversation for a bowl of good food, then the only other negative is that the display bananas previously mentioned, combined with the bin outside, means there may be fruit flies to battle with over your meal on a hot day.

This defiantly alternative eatery is the work of King Cook, a charismatic, outspoken and passionate vegan chef who is unapologetic about his commitment to the cause.

CookDaily will shortly be serving bowl after vegan bowl to besuited office workers, laptop-wielding creatives and savvy tourists, many of whom are as keen to Instagram their food as they are to eat it.

Since launching in Shoreditch in 2015 (a second branch opened in Boxpark Croydon in 2016), CookDaily has acquired legions of loyal followers and a cult-like cool within certain circles, thanks to that bold, beautiful food and King’s flat refusal to compromise.

When CookDaily opened, vegan eateries in London were few and far between.

Before CookDaily, he and King would hang out, talking veganism and eating.

The menu here is comprised of a series of ‘bowls’, each of which is colourful enough to resemble a rainbow.

Each generously sized portion is served in a bowl made from recycled cardboard, and you eat with a wooden fork.

Cook Daily must be one of the most unpretentious restaurants in the capital.

There are lots of Southeast Asian flavours here, with his mum’s green curry and the yoga fire bowl (chilies married to coconuts) standout favourites.

For under a tenner you get a healthy, genuinely satisfying, rainbow in a bowl.
