For our lunch box version we’re using lamb neck fillet with golden glorious swede and a wild garlic salsa verde.

What you will need 1 potato, I like Maris Pipers for roasting ½ small swede 75g lamb neck fillet, cut into chunks or use leftover leg of lamb or shoulder of lamb meat 3 tbsp olive oil 1 tsp.

Before setting up his sandwich shop Max was most recently working at Le Coq and previously worked for The Salt Yard Group, Arbutus and Brindisa.

Last November he created a haven for those seeking a proper robust sandwich, Max’s Sandwich Shop in Crouch Hill, North London.
