Hidden away in Islington, a tiny chef called Thuy cooks up the most delicious soups, noodles, pho and nibbles, in a tiny kitchen.

All dunked in the special, secret house hot sauce.

Served with herbs, fish sauce, chilli sauce and lettuce.

Hot, steaming broth, succulent slices of beef, fresh greens and oodles of noodles.

Stuffed and utterly satisfied, we popped in to stock up on the secret sauce and said our goodbyes.

The Little Viet Kitchen started out life as a food blog and supper club.

After over a year hosting people from her flat in Angel, Executive Chef Thuy Pham ran a much-acclaimed pop-up in Highbury, before focusing her attention on opening her restaurant, The Little Viet Kitchen, in Chapel Market, Islington.

The restaurant is lovingly designed, and Thuy has kept the same focus on traditional dishes paying homage to her childhood whilst mixing in the occasional influence from her life in London.

Now, not only does The Little Viet Kitchen provide outstanding, authentic Vietnamese food, but with each bill, they add 99p to enable the planting of a fruit tree in the developing world.

Working within a network across Africa, Asia and South America, Green Earth Appeal, the Little Viet Kitchen’s tree planting partner and a United Nations Environment Partner, help to provide “exit strategy aid”.

‘The one dish I would have to make anyone who hadn’t had Vietnamese cuisine before is pho,’ Thuy Pham tells me as we sit down to talk in her Islington restaurant, The Little Viet Kitchen.

All those flavours all coming out at the same time, perfectly balanced so you can’t single them out – it’s something I love.’

Perhaps that’s why Vietnamese cuisine has gained a reputation for being cheap and cheerful; you get a lot of flavour for your money.

But Thuy isn’t just knocking out the same old broth as anyone else – she’s taking the intense, fresh flavours and vibrant colours of her childhood and using them to prove just how good Vietnamese can be.

‘My father always had a rule – in the house, we would always speak Vietnamese and eat Vietnamese food,’ she says.
