Our recipe for a simply delicious Italian meal?

While imagining our Pastificio, what sprang to mind were images of Italian homes, memories of good things and manners, and the wholesome food of our kitchens.

Enter the world of Burro e Salvia to experience the familiar comforts of fresh handmade pasta: watch as a “sfoglina” (the pasta maker) works at her craft, select from a variety of “folds” and seasonal specialties to take home, or eat in within the comfort and style of our dining rooms.

Fresh pasta is a lifestyle and a culture that is the envy of the world, and we're proud to have brought one of Italy's most traditional artisanal trades, the Pastificio, to London.

You can pick off the menu or you can go fo a meal deal for £11.95 each which is poppadoms, any starter and then mains with rice and nan with a dessert to finish.

We said we were hungry so she countered that by tempting us with her sizzler - a mixed dish that includes chicken tikka, samosas, onion bhajis, seekh kebab, mushrooms, kebab meat, onions and curried chips.

We went for chicken makhan cooked with cream that was mild to medium, chicken achari cooked with pickles, herbs and spices and tandoori king prawns tikka cooked with garlic, ginger, onions and tomatoes in a tandoori sauce.

Fine quality chunks of chicken and the prawns had been cooked just right - so often in restaurants they can get rubbery.

For pudding we were given the chance to try their three main desserts - rice pudding, carrot pudding and gulab jamun.

After a few years in Harringay it is possible, if not to tire of the incredibly good-value, fresh and delightful Turkish (in fact mostly Kurdish) grill restaurants on Green Lanes, then at least to wish for a little more variety to be dotted among them.

In 2014 he opened a tiny (22 covers) place, Anima e Cuore, in Kentish Town (129 Kentish Town Road, NW1, 020 7267 2410), which rapidly became known for offering incredibly good and good-value Italian food — as good as any in London, many customers concluded.

Last year Mustapha also took over these new premises, formerly a pizza joint, on a fairly rough corner of West Green Road and Harringay Road, meaning to use the kitchen as a prep place for the Kentish Town operation, opening for customers only while they were there during the day.

Then we had fresh pasta as good as any ever, one with a deep partridge ragu (it would have been criminal to smother this with Parmesan), the other with an incredibly generous grating of profoundly aromatic black truffle (for just £15).

With fresh pasta as good as this, so well sauced, what else could you want at this time of year?
