Three decades later, he has become probably the world's most celebrated steak chef, mainly because of the branches of The Cut he has opened in Los Angeles, Las Vegas and Singapore.

On the lunch menu, the starters vary from Austrian oxtail bouillon (a broth) with chervil and bone-marrow dumplings (£9) to an Australian wagyu (a breed of cattle highly prized for its flavour) steak sashimi, with spicy radishes and Greek cress (£18).

For £48, there is a tasting of New York sirloin, which is, in fact, cuts of American, English and Australian steak.

There are five to choose from – béarnaise, home-made steak sauce, Armagnac and green peppercorn, wasabi-yuzu kosho butter (concentrate on the first and last words) and creamy horseradish – each of which is mouthwatering.

We ate Sunday brunch as a family at CUT at 45 Park Lane, a Dorchester Collection restaurant; which gives you a small insight into the kind of joint it might be.

CUT London is a mirror reflection of it's namesake in Beverley Hills - in layman's terms, a fantastic steak restaurant with French and American influences.

The reputation Puck has for the quality of meat his restaurants serve up is surely one of the main draws, and the perfect place to introduce young diners to how a steak should taste.

But, to be honest, if you don't want to push the boat out on Sunday brunch at a restaurant known for it's American and French fusion, and therefore calorific, cuisine, then when will you?

Beneath it's glitzy surface, CUT is a good candidate for best steak restaurant in town, with a whole heap of tempting other options besides.

The lobby flows into Cut at 45 Park Lane, one of the best spots for a steak in the city.

This is the smallest of the Dorchester Collection's properties and, as such, the vibe is more relaxed boutique than formal grand-dame.

Even the smallest rooms are generous and have views of Hyde Park.

Décor is a pleasing medley of mint walls, caramel carpet, dark wood, and leather.

Guests get free access to the spa at the Dorchester hotel nearby.

His name is Wolfgang Puck and unlike Mr Keller, he (or his executive chef) is here to stay at Cut, on the ground floor of a Dorchester Hotel offshoot.

If the technical term for Cut is “steak house”, this is misleading.

One waitress repeatedly tried to coax my friend into upgrading his glass of Brut house champagne to one of a pink bubbly which, a glance at petrifying wine list revealed, cost £8.50 more.

But Americans are phobic about strong flavours and however long the beef is hung (in this case five weeks) I still haven’t met a USDA steak with a hint of gamey savour.

Herby chips were impeccable, a vast tower of crunchy onion rings superb, and the sauces and condiments a delight (who knew about “violet mustard”?)
