For our first course we were served a taster of the St James Caviar which, our host informed us, is best appreciated when rolled against the palate in order to release its full flavour.

This caviar has marked its place in culinary history after being first prepared in 1932 for the inauguration of the Prunier restaurant in the eponymous London Street.

The choux pastry was perfectly spongy and the waiter wasted no time in drizzling a blanket of hot chocolate sauce generously over the top to complete the delicious dessert.

Depending on the species of sturgeon, area of harvest, and treatment of the eggs after harvest, caviar can vary in texture, flavor, and appearance.

I brought back five tins of sturgeon caviar to Serious Eats World Headquarters where we had a blind tasting.

The caviars ranged in price from $113 to $481 per 50 gram tin.

Caviar is generally graded by the size and texture of its beads (larger, firmer beads that pop in your mouth are more rare, and thus more expensive), and by their flavor—as a general rule, more mildly flavored caviars tend to be more rare.
