The Oyster Masterclass is held once a month at Bentley’s Oyster Bar and Grill and costs £65 per person.

That Native Oyster was so fresh and firm and meaty, and they were right, lemon and black pepper is definitely the way forward.

Done in so many different ways, they were baked, fried, marinated and served with spinach, hollandaise, garlic, chorizo etc Completely different to the fresh oysters, each was delicious in it’s on right, but it only really tasted of the sauce or the way it had been cooked.

The Oyster Masterclass  at Bentley’s Oyster Bar & Grill is held once a month  and costs £65 per person.

They last for about an hour and a half and include champagne on arrival, oyster master class and tasting with sommelier matched wines.

The backstory Bentley’s is a true icon on London’s restaurant scene, and has a long history to prove it — it celebrates its centenary this year.

Bentley’s has been synonymous with oysters since long before TfL was.

Seafood platters, fish and chips and the Bentley’s fish pie are also classics worth exploring, though any of the fish dishes the kitchen turns its hand to are a safe bet.

Countless celebrities have passed through Bentley’s doors over the years, but the restaurant has a policy of not sharing.

Tickets are available to meet Richard Corrigan on Saturday June 11 on the British Pullman, featuring some of the best of Bentley’s.

Here, he reviews his restaurant of the year and other gastronomic milestones Bentley's Oyster Bar and Grill, 11-15 Swallow Street, London W1 (020 7734 4756) Meal for two, including wine and service, £50-£100 Obviously, as a meat eater, I'm happy to see animals suffer for my dinner, but even I felt sorry for the big beast I came across at Bentley's Oyster Bar and Grill, its flesh so terribly slashed and wounded.

Indeed, studying a menu which boasts such standards as fish pie, grilled Dover sole and Welsh rarebit, it struck me as exactly the right place to see out a year's restaurant-going.

It was there at JoJo's in Whitstable, where a one-woman kitchen brigade chucked superb squid in the deep-fat fryer, or at the Goods Shed in Canterbury, where the best ingredients received the minimum interference.

The stupidities were, of course, as stupid as ever: Center Parcs attempted 'fine dining' and left me feeling grateful that my wife was too unwell to detain us for pudding; Tugga defamed the good name of Portuguese food, and at Cocoon, the menu ranged across Asia, doing terrible things to noble culinary traditions.

Upstairs is a posh-looking dining room with a few meat dishes on the menu - lamb pudding, mixed grill, roast mallard - but the real fun is to be had downstairs at the bar, watching the shells fly.

Bentley’s Oyster Bar and Grill came to life in 2005, when it was taken over by talented chef and restaurateur Richard Corrigan.

Arranged over three floors, the seafood restaurant combines a relaxed Oyster Bar and Terrace, a more formal Grill restaurant, and two private rooms.

Breakfast is available on the Terrace; all day dining is offered in the Oyster Bar; and exquisite seafood and meat dishes are served in the Grill restaurant for lunch and dinner.

The Jameson Room at Bentley’s Mayfair is ideal for lunches and dinners for 15 to 60 guests, with its own private bar and lounge area and dining room.

The Crustacea Room, a beautiful dining room with natural daylight, is perfect for special occasions or corporate dinners for up to 14 people.

Though central London’s closest coast lies more than 25 away, the city is home to some of the country’s greatest restaurants specialising in fish and seafood.

Unlike Corrigan’s Mayfair, no less, the downstairs dining space at Bentley’s – with it’s bar stool-lined counter and closely placed tables ensuring a convivial atmosphere – is less formal than the menu might suggest.

Classic such as lobster bisque, fish pie and Dover Sole sit alongside more contemporary dishes including ‘eel, bacon & horseradish’ or oyster Croque Monsieur, for instance.

Instead, the fish’s slick potency is cleverly balanced by the tart rhubarb, though the overall dish’s texture leaves a little to be desired.

The interior remains as polished as ever, with art deco windows, the original marble oyster bar and wood panelling.

Weeknights in the more formal first-floor Grill restaurant have a restrained business-dinner vibe, but the downstairs oyster bar is pleasingly laid-back.

Our oysters (Dorset rock, Mersea natives) were exquisitely fresh, while mains of perfectly grilled langoustines, and scallops served with broad beans, crispy pork, parma ham, toasted cashew nuts and blood orange were faultless in flavour and presentation.

We sat among gregarious City boys, Notting Hill couples on third dates and Regent Street shoppers – the bar’s tightly packed tables mean eavesdropping is inevitable.

Even comically haphazard service – after the third omission our smiling waiter took to periodically appearing at our table to check if he’d forgotten anything – failed to dampen our experience.
