The Chik'n Tiki Sandwich, with hot sauce, buttermilk mayo, pineapple, bacon and cheese is amazing.

Then there are the burger options with some or various of the components of the Tiki, plus extras, my favourite being the Chik'n Hot - Sriracha sour cream, lettuce and spicy slaw.

As well as burgers there are Chik'n Tenders and Clusters, and Chik'n Wings, that come naked, hot or finger licking sticky.

There are fries, Nacho style all in - with Szechuan Chik'n chilli, nacho cheese, pink pickled onions and bacon bits, and a veggie version of the same.

Order one of each of the dips (20p each) and you can choose from blue cheese sauce, hot sauce, sriarcha sour cream, buttermilk and herb mayo, and BBQ sauce - they're all delicious.

'That sure ain’t chattin’ food,’ says the Mayor, as I gaze down at a quarter of fried chicken, perched upon a slice of cheap white bread.

I’m not quite sure what he’s on about, but hell, he’s agreed to have lunch with me and talk hot chicken.

The city may be best known for the eternal twang of country guitar, but for me, it has further reason for worship, namely the birthplace of that aforementioned fiery fowl, a local speciality that sees spice-marinated chicken dredged through flour spiked with ever-increasing amounts of cayenne pepper.

‘To know about fried chicken,’ drawls John Egerton in his classic Southern Food, ‘you must have been weaned and reared on it in the South.

Still, the CHIK’N hot burger is a serious beast, a great fat wodge of divine fried chicken, slathered in Sriratcha sour cream, loaded with a sharp tangle of spicy slaw, and wedged into a bun that manages to be both soft AND hold the whole thing together.

We order a Chik’N classic sandwich but we’re given the limited edition tiki sandwich (£7.45) instead.

Wings (£5.45 for 6) also retain their crunch while being coated in the Chik’N hot sauce – I have no idea how they do it.

Chik’N clusters (£2.95) come without sauce but you can buy dips like blue cheese and Sriracha sour cream separately.

Basically, KFC’s popcorn chicken but ten times better.

So now Chik’N has opened, you’ll find me there, tucking into free range fried bird, like the angel I am.

In a nutshell: Chicken sandwiches and all-day breakfasts from the Chick ‘n’ Sours crew Summing it all up: Baker Street will the home to the flagship branch of CHIK’N, an ethical fried chicken restaurant that’ll be open all day, serving bacon, maple syrup and chicken tender hot cakes, fried chicken potato buns and heaps of sides (including Disco Wings and Tenders).

Chick ‘n’ Sours have been taking London by storm lately, with their wonderful fried chicken and strong cocktails and they’re not finished yet.

They're kicking off with "CHIK’N Tiki Sandwich" -with hot sauce, buttermilk mayo, lettuce, pineapple, bacon and cheese.

The breakfast menu sees plenty of creative uses of fried chicken, like their cheese, egg and CHIK’N sausage sourdough breakfast muffin, and their CHIK’N tenders with bacon and maple syrup hot cakes.

The new restaurant’s motto is “fresher, healthier, tastier fried chicken for the people”, with the restaurant striving to emphasise the feel-good factor and strip away any of the guilt one might have at eating fried chicken.
