Thinly slice the chicken and coat in the chipotle sauce.

Put a spoonful of the chicken mixture on the tortilla and layer up with roasted peppers, spring onion, cheese and coriander.

Fold the tortilla wrap in half and brush lightly with olive oil.

Heat a pan and griddle both sides on a moderate heat on both sides until the cheese is melted and the filling is oozy.

I love Mexican food and I think this is the best British Mexican restaurant chain I've been to in a very long while.

If the name already rings a bell, it's probably because you've seen Wahaca's co-founder, Cheltenham born Thomasina Miers on Channel 5's Mexican Food Made Simple tv cookery program or maybe you remember her as BBC 2's 2005 Masterchef winner.

For under £20 we had the Wahaca Street Food Selection for 2 people: 3 pork pibil tacos, 3 winter vegetable tacos, 1 large huitlacoche quesadilla, 2 black bean tostadas and 2 chicken taquitos with green rice & black beans.

Unlike some British Mexican restaurant offerings that appear to come straight from the microwave or the deep fat frier, these were cooked to order and packed with fresh vegetables.

A very slick operation that has been replicated in 11 locations in the South East, 13 if you count the 2 Mexican Mobile Eating vans.

The restaurant, for Mexican tapas chain Wahaca, comprises eight coloured containers that have been stacked up in pairs to provide a two-storey building with a glass atrium at its centre.

The temporary restaurant will occupy the terrace outside the Queen Elizabeth Hall for 18 months before moving on to a new location.

Situated against the heavy concrete backdrop of the Queen Elizabeth Hall, each container is painted in one of four vibrant colours ranging from deep turquoise to straw yellow, providing a colourful contrast to the restaurant’s grey surroundings.

ES Food Newsletter Mexican street food experts Wahaca have opened an exciting new pop-up restaurant on top of the Southbank Centre.

Cobbled together from eight recycled shipping containers – a bit like Boxpark, but with more tequila – the new venue perches on top of the Queen Elizabeth Hall, boasting great views over the Thames.

The two storey overhanging structure has been designed to carry on the theme of the Southbank Centre’s Festival of the World, which runs until September 9 and has turned the site into a bustling port filled with outdoor art installations from around the world.

From the new specials menu – which we are told is set to change for each of the restaurant’s 18 month residency – grab some chili tacos with feta cheese.

You’ve heard of living in a box.

Or, to be precise, eating in one of eight shipping containers, as part of a temporary restaurant?

This pop-up Mexican restaurant and ‘dining project’is perched on the terrace of the Queen Elizabeth Hall, with 130 seats spread over two floors as well as outdoor seats (which have the best views of the river, obviously).

It’s decorated with graffiti from artists around the world (with Mexican street artist Saner leading the charge).

Flush with their Sustainable Restaurant Association award, they’re attemptied to build the containers up using as little fuel as possible – no gas, and barely any electricity.
