After being a little smoked out in the dining room, my friend Justine and I sat in the gorgeously appointed drawing room, sipping on wine as the serving team tackled an unruly fireplace.

Once restored to the now much less smoky dining room, I started with a crunchy, and ironically, smoked haddock fish finger which was, as all the plates tried, presented beautifully.

It wasn’t too smoky or salted, and the garnishes of a gentle wholegrain mustard sauce, thin apple shavings and caper berries married together harmoniously.

However, it sat on mounds of unseasoned mash, in turn covered in ice cold apple foam which, although complementary to the plate, chilled the mash and made it too wet.

Justine’s apple tart had all the tastes it needed to succeed, but they just didn’t gel.

Makes 3½ cups Ingredients: 1 pound cooked chickpeas (see note) A little crushed ice ¼ cup tahini ¼ cup fresh lemon juice ¾ cup extra virgin olive oil 2 ripe Haas avocados, peeled and Salsa Verde (recipe follows) Nigella seeds Assorted cut the cooked chickpeas with a little bit of crushed ice in a food processor until a smooth paste is formed.

Note: To cook the chickpeas, place good-quality, small dried chickpeas in a large strainer and wash under cold running water, removing any foreign matter or damaged chickpeas.

Transfer to a large bowl or pot, cover well with cold water, add a pinch of baking soda and let soak overnight.

Put chickpeas in a large pot and generously cover with water.

Pistachio Salsa Verde Ingredients: About 1/3 cup pistachios Zest of 1 lemon, grated with a Microplane 3 tablespoons sliced chives 3 tablespoons chopped parsley Fleur de sel to taste Olive oil Directions: Heat oven to 325 degrees.

As well as on pasta it’s lovely tossed with green beans, asparagus and waxy potatoes.

Cook the spring onions in the butter till soft but not coloured.

Blitz all the nuts with the spring onions and garlic in a food processor, gradually adding the oil.

Cook the pasta in lots of boiling, lightly salted water, then drain, reserving some of the cooking water.

Add a little of the water to the pesto mix to loosen it, then toss the pasta with just enough to coat it.
