Danish restaurant chain Sticks ’n’ Sushi, offering Asian-inspired cuisine, has gone down a storm in Copenhagen, boasting 9 branches over there and now, one right here in Wimbledon.

The sourcing of the ingredients explains why; Sticks ‘n’ Sushi has it’s own rice field in California, where they grow and export top-quality Japanese rice (as the Japanese are loathe to export their own) which is then expertly cooked.

Other delectable delights include ‘Large Chaos’ chirashi zushi (£19.80) and ‘House Aquarium’ salad (£13.90), both loaded-up with various fishy treats.

That’s the whole idea; ‘affordable luxury’ is the ethos here, and if you don’t want to rack up the cash on bits and bobs there is a whole menu of individual sets (£6.50 - £27) or large sharing platters, ranging between £15 - £30 per person.

Sticks ‘n’ Sushi is at 58 Wimbledon Hill Road, SW19 7PA and will open Wednesday 14 March.

Hosomaki zushi - the smallest rolls - contain only one or two ingredients, unlike the bigger futomaki zushi, which are usually stuffed with a variety of ingredients and wrapped with a whole sheet of seaweed.

More original, uramaki zushi is the "inverted" version of futomaki: the seaweed, instead of being placed outside the rice, is found inside, between the filling and the rice, with the outside often covered with sesame seeds instead.

Finally, the exception to the rule is temaki zushi (temaki means "hand rolled") - it's not round!

It's more like a seaweed cone, again filled with vinegared rice, fish and raw vegetables.

Like most sushi, maki zushi are usually enjoyed with soy sauce, wasabi and ginger.

A little brighter: the new signage.The new incumbent, Kenneth Kim, is a sushi chef with a perfectionist streak who has learnt his trade at Sushi Samba in the Heron Tower, Tsukiji Sushi, The Westbury Hotel, and Ozu Zen Cuisine on the South Bank.

I opted for the chirashi zushi – my favorite dish at Satuma: good, but with this dish I missed the diced fish as served by the previous chef, a delicious staple that hit the mark every time.

Kenneth Kim in actionIn January, the Kentishtowner awarded Satuma a 6/10, observing that the owners might well be missing a trick, and that tweaks in the offering and better pricing would be relatively straightforward, potentially making all the difference to the survival of an independent Japanese on our high street.

It’s early days, and the place is having a few birthing issues, but I suspect that Kenneth Kim will bring an imaginative twist to the tried and tested formula of the sushi restaurant.
