But when Matt Lovell and Rob Hampton met in 2014 and bonded over their mutual love of seafood, they knew at the very least that it would be a fruitful friendship – and lo and behold, three years dozens of popups later they’re cutting the ribbon on The Oystermen.
In the back, there’s an open kitchen from which you can see them prepare, THE FOOD Things start with – believe it or not – oysters.
After that, starters range from pickled mussels, to crab beignets, to scorched mackerel, to bream ceviche with apple Japanese Kosho seasoning.

The seafood specialists, who have been building a loyal fanbase during their ten month residency in South Kensington's The Sampler, will be moving into their longterm home on Henrietta Street with the aim to highlight seafood from all over the country.
Smart seafood fans will definitely want to time at least part of their visit to fall within Bubbles n’ Oysters Happy Hour from 3-5pm when you’ll be able to get six oysters and a glass of Crémant du Bourgogne fizz for an *exceptionally* reasonable £10.
There’s plenty on offer outside of the oysters - mussels, south coast crab, shellfish platters, daily fresh fish specials and home-cured, smoked and pickled fish like Whiskey and Oak Smoked Trout.

Think of this as your friendly all-round seafood and champagne bar – just like the ones you get in airports, only not depressing and with a brilliant menu of spanking fresh seafood rather than curled smoked salmon.
It’s all about glorious sea creatures here so think oysters, crabs, clams, mussels and cockles, alongside a seasonal fish selection.
You can choose oysters from different areas of the UK, like Cornwall, Dorset, Scotland or Essex and also take advantage of their happy hour (3-5pm) when 6 of the glistening bivalves are available with a glass of Crémant du Bourgogne fizz for a tenner.
If that’s not your thing then fear not, because beer is also excellent with seafood, and you’ll find their Everyday Oyster Stout on the menu, a collaboration with Canopy Beer Co., which is described as smooth and dark, ‘with a hint of brine and dark chocolate.’
Let’s not forget that not so long ago, Covent Garden was a restaurant wasteland, so The Oystermen Seafood Bar and Kitchen is a fine addition to the rapidly growing collection of decent restaurants in the area.
