I find it strange that in this new, glistening corner of the capital – thrown up like a game of Sim City – the line which penetrates deep into its soul (I know what you’re thinking, bankers occupy ‘The City’ and they don’t have souls), is the most treacherous of all London Underground.

It’s the second Ibérica restaurant from Marcos Fernandez Pardo – the first is in Great Portland Street – with a contemporary menu designed by two-Michelin star chef, Nacho Manzano.

There appears to be a more contemporary and playful approach to Spanish dishes, notably a puff ball cornbread with Cabrales cheese (torto), and the addition of pork burger sliders.

Fried chorizo lollypops with pear alioli, and octopus gallega with potatoes and paprika, are two highlights from land and sea, while Iberica ham and cheese croquettes are satisfying savoury mouthfuls, just as at Great Portland Street.

All those things we look for in great Spanish ham: salting the palate and lubricating the lips.

Ibérica Canary Wharf is an authentic Spanish restaurant and bar at 12 Cabot Square located right in the heart of London’s vibrant financial & business district of Canary Wharf.

Something happens between my second and third visits to the new Ibérica in Farringdon – yes, I like it that much – that causes me to question my own particular brand of food snobbery.

It's every bit as fun; the staff as charming (one even chases me as I leave, saying, "Nice to see you back, madam"; crikey); the food, a mix of traditional tapas (patatas bravas) and dishes zhuzhed by Manzana's creativity (corn torto fritter with pungent Cabrales cheese and scrambled egg), as fine as before.

The Farringdon version, a Fen bird stewed into what seems to be toughness but is just substance, served with saffron-scented savoury rice and roast piquillo peppers, may not be as life-affirming as its Asturian cousin, but it's a wonderfully earthy, comforting plate of food.

If they keep up the standards, if they continue to lavish giant amounts of loot into creating stunning environments in which to neck fine ham and porróns of godello (those carafe-with-spouts things your parents used to bring back from Spanish holidays), I hope Ibérica spreads through the UK like ripe Cabrales.

FIne tapas in Marylebone in an expansive, relaxed setting - and with a deli next door Ibérica feels like an Andalusian mansion on the corner of Great Portland Street.

So many London tapas bars go for the dark tavern look, but here the balconied upper level, internal windows, Moorish oversized lamps and traditional azulejo blue and white tiling create an expansive, relaxed atmosphere.

The air-cured beef cecina is a favourite of executive chef, Nacho Manzano, when he visits from his two-Michelin-starred restaurant in Asturias, so don’t miss that wafer-thin delicacy, served on a meat board alongside smoky chorizo or soft slices of lomo.

The menu demonstrates how traditional dishes are done best (absolutely tender octopus served simply with soft potatoes, or smooth chickpea purée with nibs of spiced chorizo) and balances this with novel playful flavour-pairings (chorizo lollipops with pear aïoli, or beetroot gazpacho lifted by red berries, cheese ice-cream and anchovy flecks).

Pop into Ibérica’s deli next door to buy cured meats and Spanish cheeses – and remember to book if you’re visiting the restaurant at the end of the week.
