I sought only fish and chips with a taste, texture and aroma so evocative I’d be transported back in time to family road trips along the North Yorkshire coast.

Fish Central, at King Square Estate, near the northern edge of Clerkenwell, serves the best fish and chips in London.

I limited my search to a single fish, cod, and a pair of benchmarks: Both criteria were repeatedly met at Fish Central, opened as a fish and chip shop by George Digby, a Greek-Cypriot, in 1968.

When the cooked batter coats a fresh fillet in an even single layer without folds, puffs, big bubbles or spattered bits, much like the crunchy one clinging to Fish Central’s wonderfully plump Icelandic cod fillets, the fish effectively steams under its protective sleeve.

Could a Yorkshire lad learn to love Fish Central’s fish and chips?

This long-standing restaurant still has the soul of a fish and chip shop – despite serving treats like oysters and lobster at smartly clothed tables in a bright, modern room.

Starters of deconstructed prawn cocktail and large sweet mussels in spicy tomato and white wine sauce with garlic bread were generous and faultless.

A mixed salad was a damp squib – mushy or garden peas are more the thing – but the chips were properly potatoey and hand-cut.

Spanking fresh, the cod’s thick, white and opalescent flakes came in golden, crisp batter neither too thick nor greasy; you could also have it fried in matzo meal or grilled.

The fish supper deal of prawn cocktail, cod and a dessert (perhaps crème brûlée with crunchy molten demerara topping) is a bargain.
