Food critics’ favourite, Wright Brothers is about to open its fourth London seafood restaurant in South Kensington, we meet its oyster-obsessed founders, Ben Wright and Robin Hancock The Wright Brothers – also known as brothers-in-law Ben Wright and Robin Hancock – will soon be opening their latest restaurant in South Kensington on the site of La Bouchée, the establishment previously known for both its cosy atmosphere and somewhat dated cuisine.

The combination of stylish décor and top-notch food seems like an easy idea but, as Robin says, ‘we originally wanted our Borough restaurant to feel like the sort of place you’d visit in Paris, so, without huge amounts of money, we set about transforming our wholesale business into a place where you could feed the public.’

In their place came fun, buzzy restaurants, and the opportunity to have oysters for a pound each in their afternoon ‘happy hours’.

This is a far cry from their original idea of literally standing on a corner in Borough with an oyster stand, but, thanks to an unexpected intervention from Mark Hix (who sold them an unwanted kitchen of his), their idea turned into a successful restaurant.

The menu’s still being developed at the time of our interview but, as Ben says, ‘the oysters and the fruits de mer will be central to what we’re doing, although we’d also like to have a strong drinks offering in our bar, so if people wanted to come in for a drink and a few oysters – like they would in France – they can do that too.’

Phil Coulter, the chap in charge in South Ken, has worked at Wright Brothers Oyster & Porter House in Borough Market for six years and before that for Rowley Leigh at Kensington Place and Henry Harris at Fifth Floor and Racine.

Enjoined not to eat plain oysters (difficult personally to review when an altercation with an oyster in the past stops me eating them) and not to talk for too long about rugby (this is the day before the World Cup warm-up) Joe chooses Oysters Rockefeller.

Coulter’s version mixes spinach with tarragon, watercress, parsley, Pernod and butter and tops it with Parmesan.

For the carb-averse Kensingtonian, gratin Dieppoise has neither mash nor breadcrumbs but a mix of white fish with spinach bathed in butter beneath crisped Parmesan.

At that dinner a rusty red fish soup redolent with saffron served with croutons, grated Gruyère and a dynamic rouille is a dish I advise definitely not to miss.

From cracked crab to octopus carpaccio, the crew serve up simple, fresh seafood from their own wholesale company - and there’s now a growing portfolio of sites across the capital to ensure no corner goes without its fix.

Top of the menu are the team’s oysters, which they farm in Cornwall and are widely acknowledged to be among the country’s best.

They’re available alongside different varieties from across the UK, Ireland and France either straight-up, as part of decadent seafood platters, or cooked and dressed - such as in an explosive umami-rich tempura version laced with sweet miso and bonito flakes.

It’s worth checking in on the regular oyster happy hours, when you can shell out for just £1 a pop - times vary by branch.

Given the restaurants’ fishy focus, the wine list errs on the lighter side, but is notably good value with plenty of unusual options, served alongside craft beers and cocktails - including the Wright Brothers Bloody Mary served with - you guessed it - an oyster.

New branch of the seafood specialists.

Wow, Orville and Wilbur Wright really branched out once they invented the aeroplane, eh?

My pal’s Dingley Dell pork belly in miso and chilli broth was even better, showing these guys can just as easily turn their hands to turf as surf.

Aviation trivia fans might like to know that Wilbur Wright died not in some Icarus incident (y’know, the guy who flew too close to the sun), but simply from eating some manky shellfish at a banquet.

This South Kensington branch is the third I’ve been to and each time I’ve left happy as a clam.
