There’s one very big problem with this new Italian restaurant cum pizzeria which has opened on Southwark Street SE1 – it’s worryingly close to my flat.

It’s not all pizzas on the menu so we started with a particularly lovely truffled burrata (£10), where the truffle surprisingly enhanced the flavour of the cheese without drowning it out.

A simple Margherita (£9), admittedly my favourite choice of pizza, and a Regina (£13), using buffalo mozzarella and cherry tomatoes, was all you could wish for.

With a sweet San Marzano tomato sauce it was some of the best pizza I’ve had in a long time.

‘O Ver might need a few weeks to settle in – on our visit we had to wait 10 minutes after our reservation time and service, although super friendly, was a little manic at times, but once they’ve ironed out a few creases they’ve got themselves a belter of an Italian restaurant.

Pure Sea Water has been scientifically proven to have more health benefits than traditional table salt, whilst also significantly improving the taste and texture of food.

‘O ver’s head chef comes from “Associazione Verace Pizza Napoletana”, an organisation which supports the True Neapolitan Pizza, (“Vera Pizza Napoletana”), both in Italy and worldwide.

And to accompany the food is an impressive drinks list including special cocktails like the Sea Tommy Margarita featuring Pure Sea Water as one of the ingredients alongside El Jimador Tequila infused with kaffir lime leaves and chilli blended with Cointreau, lime juice and agave syrup.

It’s no exaggeration that ‘O ver delivers the most authentic and traditional Neapolitan food taken to the next level with the revolutionary use of Pure Sea Water in the kitchen and other culinary touches like the wood fired oven in full view of the diners which cooks pizzas within just one minute at 375°C.

Up against the vast windows loll sacks of Caputo, the classic Neapolitan ‘00’ pizza flour and huge plastic bottles of seawater.

With the odd stagger to Tuscany for salumi and Puglia for burrata, it’s properly Neapolitan: pizza margherita to rum baba, you could be on the Spaccanapoli.

“United Colour of Naples” delivers a selection of street-food classics, a little like the city’s cuoppo – freshly fried items (arancini, frittatine di pasta, crocchè) that are traditionally snacked from a paper cone.

But I’m dredging it out of the forbidden box for ’O Ver (the name is Neapolitan dialect meaning “it’s true”).

An Italian restaurant that uses seawater in its pizza dough.

Seawater may not sound like the most appetising thing to add to a batch of pizza dough, but the folks at Neapolitan pizzeria ’O ver swear by it.

Sure enough, the pizza I tasted was both fluffy and flavourful, topped with splodges of n’duja and a pool of molten mozzarella.

Otherwise, the food is thoughtfully sourced and simply presented.

O ver serves thoroughly decent dishes made with excellent produce – and can genuinely claim to put a bit of the Mediterranean on every plate.
