A smoked eel sandwich, with lashings of horseradish and a pinch of pickled red onion, which is as much of an institution at the iconic Soho restaurant as its stained glass windows, friendly staff, and daily-changing illustrated menus.

As we move downstairs and go through the restaurant to reach the kitchen (stopping intermittently as Lee greets patrons as old friends), he explains the appeal of the smoked eel sandwich.

"We buy around six whole (it keeps it more moist that way) smoked eel from one of the largest suppliers in the country, in fact the only last true supplier," Lee tells me.

Lee chops the smoked eel fillets down the sandwich size, butters some bread, and muses: "These curious properties the wide Sargasso Sea has.

Sandwich fully assembled and a generous spoonful of pickled red onion placed by its side, I recall Lee telling me that the dish used to be "a less elaborate affair."

Today, we visit one of the oldest cafes in London's East End, headed up by the inimitable Arthur Woodham.

It's as fresh-faced as Arthur Woodham himself, a man in his 76th year of service and still sweeping across the cafe floor as easily as a knife-load of softened margarine over a split bread cob.

Downstairs, Woodham's wife Eileen and two other kitchen staff make the hot food: chips, cooked breakfasts, and the daily specials—usually a rotation of pies, stew, chicken, and liver.

The family enterprise began in 1935 when Woodham's father opened a cafe down the road near Shoreditch.

As for the future of the cafe, it's likely to remain in the family, but surely by now Woodham is more than qualified to receive his carriage clock and golden handshake?

This time, it's the turn of Brian Clivaz and Laurence Isaacson, chairmen of London's famed French restaurant and private members' club L'Escargot in Soho.

While Clivaz and Isaacson aren't technically the ones behind the bar at L'Escargot, one thing's for sure: they sure as hell know how to throw a party.

I'm sitting with Brian Clivaz, one of the two inimitable owners—along with Laurence Isaacson—of L'Escargot, the French restaurant and private members' club in London's Soho.

Isaacson went on to co-found French restaurant group Groupe Chez Gerard, serving "the best steak frites this side of Paris," which is how he came to meet Clivaz.

Clivaz and Isaacson reel off names of people who stayed and partied at Home House, from Hollywood stars to members of the Royal Family (Clivaz says: "I think we've had all the members of the Royal family, apart from the Queen."
